Would I need to install some VSTi and connect it to vArranger in order to use the drawbars I saw somewhere in the manual, or is this already built into VA?

Those Drawbars in the manual are only for the Ketron SD2
VST organs are far better

Why do you need this?
You can control the VST drawbars from your midi controller with vArranger
